When making lamb curry, how do u know the lamb is done.. if its chewy what does this mean?

Hi, if you've cooked the lamb in sauce in the oven in a covered dish and it's chewy then it means you haven't cooked it for long enough. Likewise if you've done it on the hob in a covered saucepan. Overcooked chewy lamb only happens if you're roasting a joint. The trick for good lamb curry is to cook it for a long time at a low temperature, I do mine for 2 hours at 150C. Then before serving take it out of the oven still covered and leave it for 10 minutes, this lets the lamb 'relax' and improves the texture. Adjust the cooking time according to the cut of meat, if you're using mutton give it an extra 20 minutes. Best way to know if its done is to take a piece out, let it cool for 5 minutes, then try it! mmm making me hungry thinking about it...
